- Winemaking: Wine from delimited vines : selected grappes from our three oldest parcels of Meunier: Pierrotte, Marie Mulotte and Neuville; which are about 70 years old, with low yield. Harvest 2019.
- Vinification & Ageing: In a big Barrel from Burgundy (oak), without stirring.
- Blending: 100% Meunier
- Dosage: 3.5g/L
Tasting:
- Eye: Magnificent yellow gold color with pinky tints, typical from Meunier (black grape variety with white/pinky juice). It is completed by a lively effervescence made from very fine and melting bubbles. Fine and long lasting crown at the surface.
- Nose: The nose, complex and fresh, opens on fruity notes. Nice bouquet of white and yellow fruits. With ventilation, some opened notes on prune and quince make way for light salt notes, which will tickle your taste buds. Vinification in wood barrel brings richness and complexity.
- Palate: On the palate first fresh and on the same time very softly, making way for a nice bouquet of white and yellow fruits. Meunier old vines and its vinification in wood barrel without stirring brings finely structure, balance and vinosity. Notes of well ripe fruits lightly stewed open on a long lasting finish with some light salt notes, tickling taste buds and inviting to meal! This structured wine with a low dosage (Extra-Brut) is well balanced on the palate, Between freshness, fruitiness and elegance with a fine and long lasting finish..
Food pairing: This Blanc de Noirs will surely enhance your aperitif ! High gastronomic Cuvee, it will be outstanding accompanied with seafood, beautiful oysters, and fine fishes. Or also with sweetbread, caviar…. Will surprise you together with some aged cheese (comté, beaufort…).
