Single vine plot planted in 1960/61 ageing in oak barrels Verzenay with the use of natural yeasts. Non-chaptalized wine, aged on lees for 9 months with batonnage, without fine or filtration. If winter permits, switch to natural cold. Without FML.
- Blending: 100 % Pinot Noir.
- Vintage: pure 2019.
- Dosage: 7 g/l natural.
- Origin: Plot selection on belemnite chalk.
Tasting: Open nose of ripe pear, fennel, and sweet spices. The palate combines power and elegance! The palate, very structured, is nevertheless very structured, even framed by a chalky minerality that goes towards candied lemon, with a long bitterness, which coats the palate for a long time in successive layers.
Food pairing: To be paired with meats (honey-glazed pork ribs), or combined with spices (tagine, tian), or even Asian cuisine (ramen).
