Vintage 2016 from a selected plot of our ancient Chardonnay vines in Avize, after a close and constant maturity index monitoring before harvesting. The dosage is set voluntarily low to keep maximum refinement. This cuvée is also a tribute to our family history and to our ancestors’ work.

• Blending: 100% Chardonnay Grand Cru
• Harvest: 2016
• Average age of vines: 50 years
• Fermentation: Not malolactic, in stainless steel vats
• Dosage: 5g per litre
• Terroir: Avize, from a single vine plot: Chemin de Paradis
• Ageing: 6 years, on lees

Tasting: This is a very fresh Champagne, light and elegant.

• Nose: Intense and complex nose of fresh and candied fruits, including citrus and other exotic fruits aromas in a "tutti frutti" style on a minerality background (chalky and salty).
• Mouth: This cuvee’s mouthfeel is at first very refreshing, but also sharp and straightforward, distinguished by its own elegance.

Food pairing: A great Champagne for aperitif, that could also suit exotic or citrus fruits based desserts.
