The pinnacle of the Cazals range. From the plot called «Vieilles Vignes» within the Clos Cazals in Oger, vines planted in 1957, over 65 years old, comes this extraordinary parcel champagne. The 2014 vintage was warm overall despite contrasting weather, delivering grapes of good quality and a comfortable yield. Vinified in stainless steel with 20% in oak barrels, then aged nine years on lees, disgorged January 2023. This is a champagne for those who understand that greatness requires time.
Tasting notes: On the nose: a light, timid opening on white flowers and hawthorn, gradually revealing gourmet and generous notes of candied citrus and pastry. On the palate: a frank and lively attack, full and chiseled. The minerality of Oger's terroir is confirmed with citrus notes, embellished by a round and buttery touch. The finish is long, tonic and iodized.
Food pairing: To be enjoyed with a dish. Exceptional with foie gras, white meat with mushrooms such as poultry with morel sauce, Saint-Jacques and other noble fatty fish.
