The most unconventional champagne in the Cazals range, and one of the most original in all of Champagne. The Solera is built on a perpetual reserve running continuously from 2004 to 2020, drawing on the solera method traditionally used in Sherry production. Every disgorgement pulls from this living reserve, giving the wine a complexity and depth that no single vintage could achieve alone. Disgorged February 2024.
Tasting notes: On the nose: refined and layered, subtle pear flesh, a woody and slightly oxidative sensation, grapefruit, white flowers and mint. On the palate: a frank, pure and deep attack carried by beautiful minerality, developing with dried fruit aromas that add roundness and remarkable depth.
Food pairing: Exceptional with seafood, oysters, white fish, sushi and sashimi. A champagne that also holds its own as a contemplative aperitif.
