The Esterlin solera was started in 1972, every year since, a portion of the harvest has been drawn off and added to the living reserve. The Ex-Soléra is the cuvée that most directly expresses this reserve: it contains 40% of base wines drawn from the solera, using the same Meunier-dominated blend as the Brut Éclat but with a significantly older base vintage and a lower dosage. The result is a champagne of greater density, depth and complexity than the Brut Éclat, and a wine that spans decades of Esterlin's winemaking history in a single glass.
Tasting notes: Rich and complex on the nose, with the layered oxidative character and depth of old reserve wines alongside fresh fruit. On the palate: a higher density and a rich, full body from the solera component, with a long and evolving finish.
Food pairing: A gastronomic champagne. Exceptional with poultry, veal, aged cheeses and dishes with truffles or mushrooms.
