The exception that proves the rule, the only cuvée in the Franck Bonville range where Chardonnay is joined by another grape variety. Composed of approximately 90% Chardonnay from Avize Grand Cru and 10% Pinot Noir from Verzenay Grand Cru on the Montagne de Reims, chosen specifically for the elegance and finesse of its red grapes. The Pinot Noir is vinified in oak barrels. Malolactic fermentation in stainless steel. Dosage around 6.7 g/l, determined by blind tasting. A score of two terroirs, the chalky tension of the Côte des Blancs and the graceful fruit of the Montagne de Reims, in a single harmonious expression.
Tasting notes: On the nose: very frank aromas of red fruits, wild strawberries and cherries, followed by pastry and brioche notes typical of the house, giving depth. On the palate: round and silky attack, well balanced by beautiful minerality. Fine bubbles, an ample but elegant texture, and a long saline finish. Pale pink with fine and numerous bubbles.
Food pairing: A natural aperitif. Also excellent with salmon, tuna tartare, light summer dishes, fresh fruit desserts (strawberries, blackcurrants) and mild cheeses.
