A Rosé de Saignée, the most intensely coloured and structured method of rosé champagne production, where Pinot Noir juice is allowed to macerate on the grape skins before pressing, extracting colour, tannin and depth. At Vollereaux, the Rosé de Saignée is 100% Pinot Noir from Pierry Premier Cru, aged three years on lees. The result is a Rosé of great roundness and generous red berry character, a champagne that the house describes as subtly sweetened by notes of red berries, with pastry and vanilla notes appearing after aeration. Mundus Vini Gold Medal 2023, Wine Spectator 92 points.
Tasting notes: Intense raspberry colour, slightly tiled, with fine and persistent effervescence creating a beautiful mousse. On the nose: red berries and crushed strawberry, revealing greedier pastry and vanilla notes after aeration. On the palate: suave and generous structure, full and bodied, with aromas persisting to give a very long finish.
Food pairing: Outstanding with macarons and fruit desserts. Also excellent with duck, game birds, salmon and semi-cooked foie gras.
