A Grand Cru Blanc de Blancs from the Côte des Blancs village of Avize, one of the most prestigious Chardonnay terroirs in the world. The Chaléroux-Ghys estate spans 4 hectares around the Grand Cru villages of Avize and Oger, where the only grape variety grown is Chardonnay. Assembled from different Grand Cru parcels and multiple years, 50% 2016 and 50% reserve wines from 2010 to 2015, with malolactic fermentation completed. What sets this champagne apart from virtually every other producer: the bottles age for no less than 10 years on lees in the cellar before release. No filtration. Minimal automation. Pure artisanal production.
Tasting notes: On the nose: the toasted and brioche aromas that define the Chaléroux-Ghys style, the unmistakable signature of decade-long lees ageing. Citrus aromas typical of Blanc de Blancs from the Côte des Blancs, enriched by the deep, yeasty complexity that only time can build. On the palate: full-bodied, with a long and complex finish.
Food pairing: Versatile and gastronomic. Excellent as a refined aperitif, with fine oysters, shellfish and noble fish. Also exceptional alongside poultry, veal and aged cheeses.
