The name Clavier refers to the keys of a piano, and the blend reflects this: approximately two thirds Chardonnay, one third Pinot Noir, an inversion of the house's usual Pinot-dominant approach. Base vintage 2019, with 30% perpetual reserve wines. The Clavier is the house's Chardonnay-forward expression, more mineral, more vertical, more taut, where the Brut Grand Cru is the Pinot-forward entry point. Dosage at 7 g/l. Regularly praised in the Hachette Guide for consistency and refinement.
Tasting notes: Intensely floral on the nose with great freshness. On the palate: the classic Secondé saline mineral note comes through cleanly, supported by the structure of the Chardonnay. Long, elegant and precise.
Food pairing: Outstanding with fine shellfish, lobster bisque, noble white fish and aged goat's cheeses. Also excellent as a serious aperitif.
