The signature entry cuvée, and already a champagne that carries the full weight of Sillery's Grand Cru history. François Secondé, who founded this estate in 1976 after starting as a vineyard worker at age 14, became the only grower-producer of Sillery Grand Cru. The domaine is now led by Jérôme Groslambert, who has worked the vineyards since 2009. The Brut Grand Cru is assembled from 66% Pinot Noir (predominantly from Sillery) and 34% Chardonnay, with a base vintage of 2021 and 30% wines drawn from the perpetual reserve started in 1982, refreshed with 30% new wine every year. A fine 2% passes through oak barrel. Hand-harvested, hand-riddled, HVE-certified.
Tasting notes: Fine attack with a wave-like development on the palate. A saline quality runs through all the Chardonnay-influenced cuvées. The nose reveals subtle, complex nuances, citrus, white flowers and a gentle oakiness, with a long and beautiful acidity on the finish.
Food pairing: An ideal aperitif. Also excellent with fine fish, shellfish and light starters.
