A champagne rooted in the deepest history of the appellation. The Originel is Pascal Mazet's homage to Pinot Blanc, a grape variety that dates back to the very origins of Champagne, cultivated long before the modern dominance of Pinot Noir, Meunier and Chardonnay. In this cuvée, Pinot Blanc (33%) is the co-lead alongside Pinot Noir (35%), bringing softness, apricot notes and a beautiful suppleness on the palate that the two Pinots alone could not achieve. Entirely vinified and aged in French oak barrels, 100%. Seven years on lees. Based on 90% 2016 and 10% 2015. A champagne of memory and origins.
Tasting notes: On the nose: almond cream and acacia flower. On the palate: velvety and supple, with the Pinot Blanc's characteristic apricot flavours and a beautiful, rounded finish. The full oak vinification adds complexity without dominating.
Food pairing: An excellent aperitif. Also outstanding with foie gras, mild cheeses, poultry with cream sauce and dishes with stone fruit or apricot notes.
