Vignon - Les Marquises Brut (Demi)

The flagship entry point to the Vignon range , and a champagne that carries the full identity of the house from the first sip. Stéphane Vignon, third generation at the estate in Verzenay, has built a reputation for champagnes of radical authenticity: natural yeasts only, no fining, and oak barrel ageing for all the parcellaires. The Les Marquises Brut draws on 70% Pinot Noir and 30% Chardonnay from vines over 35 years old across Verzenay (90%) and Verzy Grand Cru, with 60% base wine from 2021 and 40% from previous years. Despite its Brut classification, the dosage is a restrained 4 g/l, a gourmet champagne that refuses to be sweet.

Tasting notes: Beautiful light gold. On the nose: intense ripe fruits, pear, apple, and pear in particular. On the palate: frank, structured, wide, but generous throughout. Notes of ripe red fruits, strawberry, green apple, ripe grapes, denoting perfect ripeness of both grapes and reserve wines. The chalk provides freshness, the low dosage keeps everything honest.

Food pairing: Ideal as an aperitif. Also excellent with light starters, charcuterie, Comté and not-too-sweet desserts.
