A champagne named in tribute to the culinary genius of Auguste Escoffier, the chef who elevated French cuisine to an art form and for whom the vol-au-vent was a signature creation. The name is both a gastronomic reference and a description: a champagne that floats, that has lift, that pairs with the highest expressions of the French table. Vintage 2018 Extra-Brut, in the Vignon parcellaire style: Grand Cru Verzenay, natural yeasts, oak barrel vinification, no fining or filtration.
