The 2016 vintage at Cazals is a triumph of patience over adversity. The season brought torrential rain, late frost, hail, disease, heat and drought in succession, yet the harvest delivered good yields and wines of great potential. Aged six years on lees and disgorged at the end of 2023, this Grand Cru Blanc de Blancs from Mesnil-sur-Oger and Oger has had all the time it needs to find its balance.
Tasting notes: On the nose: elegant and deeply Côte des Blancs, candied citrus, pear and white flowers, balanced by Granny Smith apple acidity. After opening, iodine and menthol notes express themselves in turn. On the palate: a pure and deep attack with beautiful minerality, each aroma confirmed to the tasting, finishing with beautiful length.
Food pairing: Ideal with seafood, oysters, white fish, sushi and sashimi. Equally at home as an aperitif or throughout a meal.
