Blanc de Blancs Eclat is made without Malolactique fermentation in order to keep the freshness and complexity of aromas. Its blend is made of 100% of wine from the year 2015.
- Dosage: 8g per litre
- Terroir: Coteaux Sud d’Epernay, Vallée du Mancy, Coteaux de Sézanne, Région de Condé-en-Brie, Vallée de la Marne.
- Base Harvest: 2015
- Bottling: June 2016
Tasting: A wine of great delicacy, and some maturity aromas. A silky texture, typical of the chardonnay’s delicacy and specific to the Blanc de Blancs.
- Eye: Clear, yellow with “forest aspects”.
- Nose: Refined with freshly crushed hazelnuts notes, citrus overtones as well.
- Mouth: Straight, a nice minerality. Like the nose, hazelnuts notes in mouth.
Food Pairing: The Blanc de Blancs Eclat will be a good match with a seafood platter and cooked fish such as the delicious white butter bar, of course with an aperitif and its salmon or foie gras toasts. It will harmonize with fresh fruit desserts.
