The benchmark cuvée of Maison Bonville, and the champagne that best captures the house style in a single glass. Based in Avize on the Côte des Blancs, Franck Bonville has been crafting Blanc de Blancs since 1947, now in its fourth generation. The Brut draws on 100% Chardonnay from three Grand Cru villages, Cramant, Avize and Oger, blended from the 2023, 2022 and 2021 harvests. Alcoholic and malolactic fermentations in stainless steel. Reserve wines include a portion aged in oak foudres and demi-muids for added depth. Aged 2 years on lees, disgorged July 2025. The philosophy is clear: maturity over acidity, with dosage determined by blind tasting trials to find the precise balance each blend requires.
Tasting notes: On the nose: white flowers opening on white peach and grapefruit notes. Fine bubbles and an underlying impression of gunflint. Remarkable finesse and elegance, with a beautiful minerality wrapped in a creamy texture. The saline finish resonates for several seconds. Reads much drier on the palate than the dosage suggests.
Food pairing: The ideal aperitif. Also excellent with fine oysters, shellfish, delicate white fish and a seafood platter.
